Raw, unsalted peanuts or cashews – it will work with roasted nuts, but will be too salty if salted
100% Cocoa
Flax seed, ground fine
Filtered water, or soy milk
Honey  VEGAN OPTION: Agave nectar
Almond extract
Sea salt
Slivered almonds – OPTIONAL
Heavy cream, whipped – OPTIONAL

VARIATION
Mint flavored – Substitute peppermint extract or creme de menthe for almond extract

: 20 min
REFRIGERATION TIME
: 1/2 hr

C O O K  /  P R E P A R E

INGREDIENTS
1 c  raw, unsalted cashews or peanuts, ground (measure before grinding)
1/3 c  cocoa
1/8 c  flax seed, finely ground
3/4 c  water, or soy milk or coconut milk
1/4 c  agave nectar
1/4 – 1/2 tsp almond extract
Dash sea salt

PREPARATION

  1. Combine dry ingredients together in a bowl.
  2. Put liquid ingredients in blender, add 1/2 of dry ingredients, blend.  Add other 1/2, blend until smooth.
  3. Pour into individual cups.
  4. Refrigerate until firm.

VARIATION
Chocolate Sauce – Increase the amount of liquid to 1 c

S E R V E

Serve chilled.  OPTIONAL  Sprinkle with whipped cream &/or chopped almonds &/or sprig of freshmint.
