Raw, unsalted peanuts or cashews – it will work with roasted nuts, but will be too salty if salted
Flax seed, ground fine
Filtered water, or soy milk
HoneyÂ VEGAN OPTION: Agave nectar
Slivered almonds – OPTIONAL
Heavy cream, whipped – OPTIONAL
Mint flavored – Substitute peppermint extract or creme de menthe for almond extract

REFRIGERATION TIME: 1/2 hr
C O O KÂ /Â P R E P A R E
1 cÂ raw, unsalted cashews or peanuts, ground (measure before grinding)
1/3 cÂ cocoa
1/8 cÂ flax seed, finely ground
3/4 cÂ water, or soy milk or coconut milk
1/4 cÂ agave nectar
1/4 – 1/2 tsp almond extract
Dash sea salt
- Combine dry ingredients together in a bowl.
- Put liquid ingredients in blender, add 1/2 of dry ingredients, blend.Â Add other 1/2, blend until smooth.
- Pour into individual cups.
- Refrigerate until firm.
Chocolate Sauce – Increase the amount of liquid to 1 c

Serve chilled.Â OPTIONALÂ Sprinkle with whipped cream &/or chopped almonds &/or sprig of freshmint.
