Sucanat
Stick cinnamon
Bay leaf

GREEN MARKET
Apples – Red or green delicious

LIQUOR STORE
Red wine – Madeira or marsala
Brandy
SUBSTITUTE: port wine for both red wine & brandy

T I M I N G

MAKES 1 c of syrup, enough for 2-3 apples, depending upon size
PREPARATION TIME
:  10 min
COOKING TIME: 5 min + 1-2 min
MARINADE/COOLING TIME: 1/2 hr

  1. Mix ingredients, except apples.
  2. Boil.
  3. Add apples & heat.

C O O K  /  P R E P A R E

INGREDIENTS
1 c red wine – Madeira, marsala or port
2 TBSP Brandy
1/4 c sugar or sucanat
1/2 stick cinnamon
1 bay leaf
2-3 Delicious apples, peeled & formed into balls w/melon baller OR you can slice  in thick slices

COOKING/PREPARATION

  1. Mix ingredients, except apples.
  2. Bring to a boil & high simmer, uncovered, for 3 min.
  3. Add apples & cook in a single layer 1-2 min (1 if sliced, 2 if balled), shaking pan every 30 seconds.

S E R V E

Serve hot or warm over ice cream or French Toast.  Heat a little brandy or wine, ignite & accept the accolades that invariably accompany flaming food.  Or serve by itself, apples chilled & syrup heated.
