COOKING TIME:
15 min white quinoa; 30 min red quinoa

P R E P A R E

INGREDIENTS
1/2 c quinoa, red or white
1 c  filtered water, stock or broth
Pinch of salt

COOKING

  1. Bring water to a boil.  Stir in quinoa & salt; cover & simmer until curlicues appear & quinoa is tender but still has a little crunch.
  2. Toss with two forks to fluff it up.

PREPARATION

  1. Add balsamic vinegar to cooled quinoa.
  2. Add rest of ingredients & tos.

S E R V E

Use as a side to chicken or fish dinner or lunch, or use as a base for a vegetable or meat or chicken salad.
