- Parboil cabbage.
- Combine sausage mixture & roll into cabbage leaves.
- Combine tomato sauce, pour over rolls & bake or simmer.

INGREDIENTS – Cabbage rolls
Small head of cabbage
1/2 lb sausage, removed from their casings
4 TBSP basmati rice OR 3 TBSP brown rice
1/2 onion, minced
1/4 c green pepper, minced
8 oz tomato sauce
1/2 tsp kosher or sea salt
1/2 tsp cumin
1/4 tsp hot sauce
1/4 tsp thyme

1/2 tsp cumin
1/4 tsp hot sauce or cayenne
1/4 tsp thyme

Greek yogurt

PREPARATION
- Cut the core from cabbage, discard the outermost leaves.  Bring to boil a large pot of water. Parboil the whole cabbage for a minute. When the outermost leaves begin to separate from the head, remove the cabbage, let cool a moment & gently pull off the first layer of leaves. Return the cabbage to the boiling water until the next leaf begins to separate from the head. Remove the head, take off the leaf & return the head to the pot. Continue until all of the leaves have come off of the head.
- Mix the rest of the Cabbage Roll ingredients well.
- Beginning with the largest leaves, spoon a little (1 TBSP) meat mixture into each leaf of cabbage & roll up, tucking in the ends. Arrange cabbage rolls w/ends down in a skillet (to cook on the stove) with a tight-fitting lid, or a covered baking dish (to bake in the oven).
- Combine ingredients for Tomato Sauce and pour over stuffed cabbage leaves.
- Simmer on low heat on the stove, or in a medium (350ºF) oven, until rice is fully cooked. Brown rice will take longer than basmati or white rice.
S E R V E
Spoon tomato sauce over cabbage rolls. Top with Greek yogurt. OPTIONAL: Sprinkle with dried mint.
