INGREDIENTS
5-6 oz can of tuna
1 TBSP mayonnaise
1 stalk celery, chopped
1 green onion, chopped
1 – 2Â lettuce leaves
OPTIONS (select only 1 of the following)
- Handful of cilantro leaves, chopped
- Pinch of dried tarragon
- 1/4 tsp sweet relish, drained
PREPARATION
- Flake tuna apart with a fork.
- Add celery, green onion & herbs (&/or relish, if desired). HOLD AT THIS POINT, ADDING MAYO JUST PRIOR TO SERVING.
- Add mayo & mix well.
S E R V E
Make a sandwich on whole grain bread w/lettuce or arugula
OR
Serve on a bed of lettuce w/sliced avocado & cherry or grape tomatoes.

Great for a quick lunch. Serve w/whole grain crackers or make a sandwich w/whole grain bread. Sandwich is best if put together just before serving rather than before (the bread gets soggy!) Finish lunch with fresh fruit in season.
