C O O K  /  P R E P A R E

INGREDIENTS
5-6 oz can of tuna
1 TBSP mayonnaise
1 stalk celery, chopped
1 green onion, chopped
1 – 2  lettuce leaves
OPTIONS (select only 1 of the following)

  • Handful of  cilantro leaves, chopped
  • Pinch of dried tarragon
  • 1/4 tsp sweet relish, drained

PREPARATION

  1. Flake tuna apart with a fork.
  2. Add celery, green onion & herbs (&/or relish, if desired).  HOLD AT THIS POINT, ADDING MAYO JUST PRIOR TO SERVING.
  3. Add mayo & mix well.

S E R V E

Make a sandwich on whole grain bread w/lettuce or arugula

OR

Serve on a bed of lettuce w/sliced avocado & cherry or grape tomatoes.

W O R K P L A C E   L U N C H

Great for a quick lunch.  Serve w/whole grain crackers or make a sandwich w/whole grain bread.  Sandwich is best if put together just before serving rather than before (the bread gets soggy!)  Finish lunch with fresh fruit in season.
