C O O K / P R E P A R E

INGREDIENTS
1/2 c tahini
1 large clove garlic, pressed through a garlic press (more if you like it really garlicky)
1/4 – 1/2 c cold water
1/4 c lemon juice
1/4 tsp sea salt

PREPARATION

  1. Combine garlic & tahini.
  2. Whisk in lemon juice, salt & 1/4 c of the water until combined.  Mixture will be very thick.
  3. Add more water, a little at a time, until it is of smooth consistency but thick as mayonnaise.

S E R V E

Serve as a dip for crudités, with cauliflower sautéed in sesame oil, or Baked Fish.  Can also be used as a sauce for pasta.
