INGREDIENTS
1/2 c tahini
1 large clove garlic, pressed through a garlic press (more if you like it really garlicky)
1/4 – 1/2 c cold water
1/4 c lemon juice
1/4 tsp sea salt
PREPARATION
- Combine garlic & tahini.
- Whisk in lemon juice, salt & 1/4 c of the water until combined. Mixture will be very thick.
- Add more water, a little at a time, until it is of smooth consistency but thick as mayonnaise.
S E R V E
Serve as a dip for crudités, with cauliflower sautéed in sesame oil, or Baked Fish. Can also be used as a sauce for pasta.
