INGREDIENTS
About 1 TBSP olive oil OR use garlic-infused olive oil
Pinch kosher or sea salt
1/2 lb kale, cut into large pieces with center vein cut away

COOKING

  1. Put olive oil & salt in a bowl large enough to hold kale; tilt & rotate bowl to coat bottom & sides w/oil.
  2. Put kale in bowl; using your hands, toss kale until evenly coated.
  3. Spread on baking sheet in single layer w/no leaves overlapping.  You may have to cook in batches if you have only one baking sheet.
  4. Bake until just before kale begins to darken.  It will look uncooked; you have to touch it to feel that it is crisp.

S E R V E

Serve immediately.  Kale is too delicate to dip; eat as is.
