PREPARATION TIME: <5 min
COOKING TIME: 20 min, depending upon how thin fries are sliced

1 med yam or sweet potato, cut into small julienne strips
- Put a bit of olive oil into a covered bowl or dish; swirl around to coat the bottom.
- Put the cut potato strips into the bowl, cover and shake to oil the potatoes.
- Add salt, cover and shake again to distribute the salt.
- Arrange potato strips on greased baking sheet.
- Bake in a hot oven.
S E R V E
Serve as is. Great accompaniment to grilled meats or fish.
